Ooooo, I adore Cambazola (Blue Brie), failing that a close second is a creamy Danish Blue .....yum...

You don't actually melt it but it tastes much better if nice and runny. Real French camembert is made with unpasteurised milk, which makes all the difference, but very hard to come by in this country these days. 'Elf'n safety, you know.

I know that manchego is spanish,and gruyere is swiss...
Stilton with apricots or cranberries
Poodi... you can get French Gruyere, so I was just stressing that I prefer the Swiss variety.

There are various Manchegos, but my favourite is "al romero" which comes in a rosemary crust.
baked Camembert with cranberry sauce takes some beating

Goat's cheese definitely on the list

Halloumi - lightly grilled, with a green salad - or as an unexpected extra on a barbecue (Just don't let it drip through the rack ;-) )
Roquefort.
I want to try kefalotiri... but can't find it anywhere.
Feta cheese,VERY strong cheddar....brand / make / region does not matter...it just needs to knock my socks off, Shropshire Blue,'bocconcini'-mini mozarella....M+S do a gorgeous one-melts in your mouth.
Mmmm yes NoM Swiss Gruyere I'd forgotton about that. Also like Stilton with Apricots
Ilike nearly all cheeses, Wensleydale with cranberries and Stilton with apricots are especially yummy.
