Are the different colours of sweet peppers due to the different states of ripeness or are they different varieties? If the different colours are different states of ripeness, in what order do the colous appear?

Yellow, red, orange and purple peppers are different varieties. Green peppers are unripe coloured ones, hence the slightly more bitter taste.

If you leave green peppers on a plant they ripen, usually to red or yellow, but it depends on the variety.
