Cooking chips.

I plan to cook some chips in a deep fryer. If I sort of half cook them, and then finish them about 4 hours later, would they taste ok? I can raise the basket out of the oil so they wouldn't be sitting in the oil for those 4 hours.

Tis the only way to make proper chips stewey but I always spread mine out on kitchen paper first to get rid of the excess fat. I would cover them with paper too - just watch out for the insects. Enjoy ;o)

this answer is from one not famous for her culinery skills - however, what I'd do is par boil the pots, leave them covered in cold water then pat them dry on a kitchen towel, chip them then put into the hot oil to cook.

yeah that should be fine stewey.
there was something on tv the other night, a show called 'the hairy bikers'
theyre both cooks and they travel around the country on their bikes.
anyway, they were showing how to cook the best chips the other night.
and the art is to dry the cut chips to remove the starch from the potatoes,
then cook them in a fryer on a lowish eat for a few mins till soft,
and then remove from the fryer, put to one side until ready to eat, when they finished off cooking them by popping them back into the fryer on a high heat to crisp them up.
they looked lovely! all golden and crispy. hmmmm very yummmy :o)

Thanks for your speedy answers. Actually this deep fryer is designed so that the basket spins off most of the excess fat.

Here is the fryer I use. It's really great, and a lot safer than using a pot of oil on the stove.

all the fancy chefs say to do them exactly that way to get perfect chips. apparently it makes them soft on the inside and nice and crisp on the outside. can't comment though as we rarely have chips, and when we do they're the chunky oven variety.

Thanks to all of you: that's the way I'm going to do them.
Hi Stewey.

I always cook chips using Maris Piper potatoes as they seem the best. I then wash the chips under the tap, then bring them to the boil in a saucepan of water which starts off cold (don't boil the water first). That softens the chips just enough. I then deep fry them until they start to turn golden. Then I lay them on a cooling rack above a baking tray (to catch excess oil), sprinkle them with sea salt, then bake them in the oven for about 10 minutes. They come out lovely and crispy and most of the oil has drained into the tray.
