The pith has no nutritional value, but it is fibre, and good for the digestive system.
My mum used to tell us that it was where the vitamins were. She also told us that the vitamins in apples were in the skin, so we didnt ask for them to be peeled. Basically, anything she wanted us to eat she told us that's where the vitamins were. Obviously, i know now that it's not true....but it was clever!
