i like covering them with a mix of honey and mustard and roasting

thanks both, ive seen a lot of recipes for the honey and mustard one, fancy a cider and apple one but cant find any nice ones
You could boil/simmer it in cider first. Then-drain-season,spread with honey,and cover with overlapping,thinly sliced apples. Drizzle with a bit of melted butter,and bake in the oven.
My Mrs makes baked gammon with Cauli and Broccoli in a cheese sauce and saute potatoes
Got a jar of apple and cider sauce from m&s, just reduced it down with the juices from the gammon added a touch of flour for thickness,it was delish.

I'm sure you came across this recipe when you were searching gina but it sounds nice and I wouldn't mind trying it sometime.

Also, I have cooked a few recipes from the delicious magazine (where this recipe is from) and they have been nice every time.
Glaze with apricot jam before you bake - yum.
I saw a good one on TV at Xmas. Richard Corrigan steamed his, over a large saucepan of white wine, with a few herbs & peppercorns in the wine. I tried it and it was very tasty! Hope this helps. If you fancy going to all that trouble, I'll see if I can dig out the complete recipe for you - I'm sure I wrote it down somewhere. K
