recipe for salt beef

i used to have a recipe for the brine to pickle beef or beef tongue it was from a penguin publication by Florence greenburg. does anyone have this recipe. many thanks.

There are many recipes fot salt beef brine on the net but they are all very similar to this one. Only diffrences I can find are that some recipies include the saltpeter and some do not. saltpetre gives salt beef the traditional pink colour.

thanks Eddie51, the trouble is that like most recipes the quantities are given in vague things like 'cups
Cups are not vague things they are specific measures... you can get a set of plastic measuring cups (1 cup, 1/2 cup 1/3 cup etc) from most cookshops and the measure is for the item not pressed down and level with the top of the cup
If that's the only problem, try this for conversion.

I don't think the exact quantity of salt is critical anyway.
