Cheese in a Spanish omellete?

Due to a large surplus of fresh eggs I have taken to making Spanish omelets which we love, however we would like to put cheese in the omelette rather than melting it on the top, would this addition make it stick to the pan due to the longer cooking times compared to our traditional omelette?

Mix the cheese in the beaten egg and pour into the hot pan as usual. Non stick pan preferably. Melts very quickly. Mmm delicious.
shouldn't do if you let the base of the omelette cook out first and then add the cheese to melt - a fish slicer is quite useful for sliding the omelette out....
Can't imagine it would. Many people put cheeses in all their omelettes (think it spoils it myself).
You could always set the bottom, put on the grated cheese and put it under a hot grill. It will melt the cheese and also make the eggs rise. A quick fold and you are in omelette heaven. Lush!

The problem come when turning the omelette over if it is added after one side is cooked, I will try adding it to the egg mix though.

Dicky, surely it wouldnt cook through from the top without burning? due to the thickness?

Dick, you cant fold a Spanish omellete!
When I use cheese in the mix I cook it like a normal omelette (as if you going to scramble eggs) then pop under the grill. Works perfect if you have a non stick pan.
Ratter, I cook Spanish omelettes a lot, and I add cheese sometimes if I have any lurking about. I cook it very slowly on the gas. I have a grill in my oven so I put the shelf down a few notches and grill the top. By the time the top colours, it has cooked through.

lol... ratter has omelette paranoia. Grill the top on a low heat: if it burns you have plenty more eggs to do another...

It will if you have it on full wak on the stop shelf.
What about getting a plate bigger than the pan, put it on top of the pan, flip it over, and slide the omelette, uncooked side down, back into the pan

Snags, I just like my omelets cooked to perfection, OK, just a little paranoia. In my experience an omelet is really good or crap, no middle ground.
when i cook a spanish omlette (yummy!) i cook it on the top ring till the bottom 1.2 is done, then bung it under the grill to do the top half - no need to fold or flip

Sandy, that is the way I do it, the traditional way, just trying to prevent the cheese from sticking.

ok, many thanks for your suggestions, I will try them. I just like to do things the traditional way.
Sorry Ratter, I didn't realise you were making a tortilla. If you you cook the rest of the fillings first and then add the lightly beaten eggs and then the cheese it will work. If it is not too thick it will fold.
