Help! Got Myself Involved Again. Ideas Please

for a charity 'Light Lunch' for 30 people. Will have use of a domestic sized oven. Quiche and Salad? Chicken drumsticks? sausage rolls? I'm loathed to do sandwiches, but would do some 'open' rolls perhaps, tuna mayo or egg and cress - need some new ideas please

Bridge rolls, wraps and fresh fruit?
Chicken drumsticks? Yuk!
I would also do wraps, cut into small pieces and laid out so the filling is facing upwards.
I'd also make up a big bowl of coleslaw, some potato salad.

How about an BIG Lasagne a BIG shepperds pie, garlic bread and some salad... easy and quick to make !
What about different types of bruschetta? You could also have a selection of cold meats, cheeses and some salads - how about a couscous salad, mixed bean salad etc?
What sorts of people are you catering for? - pensioners, youngsters or mixed bunch?
Bruschetta/Crostini topped with a mixture of chopped tomatoes, basil, red onion, olive oil, balsamic and salt and pepper.

Bang Bang chicken- fry or poach chicken fillets and cover with a mixture of peanut butter and sweet chilli sauce and then sprinkle over some toasted sesame seeds, they can be served in little gem lettuce leaves (it sounds gross but it's lush!)

You could do a panzanella salad which can be made and dressed in advance.

Potato salad but instead of mayo, use olive oil, lemon juice and some fresh herbs.

A big pot of chilli and some spicy potato wedges, soured cream and torillas.

Is it a sit-down knife and fork affair or a buffet?

All ages, walkers, people who work for the forestry commission. I just phoned the lady and she said, don't go to any trouble, just do a few sandwiches and crisps - I like the crostini/bruscetta ideas, I've got lots of stuff my mother made that will come in use - like mixed pepppers in chili oil, baby plum tomatoes with pesto paste, i'll cook a ham, and some chicken breasts - and I'll go to the deli and get some salami and sausages - thanks all!!

You could add some mini pork pies to your list with a bit of pickle, and how about a nice fruit cake with some wensleydale cheese?
I would try not to over complicate the food on offer, a lot of people only like simple fayre and bear in mind the costs if there is a lot of waste at the end

good point cazz...I'll buy a gammon joint and cook a few skinless boneless chicken breasts, do a fishy something or I have got a bag of king prawns in the freezer, perhap forget the salami - or I could get a pepperami - and something cheesy and an eggy one - that covers the vegetarians. Cheese straws - haven't made those in ages, and a bowl of coleslaw, origianal, and I could do a nie one with red cabbage, carrot and apple in a vinaigrette
I can give you a nice recipe for a vegetarian dish with lentils and roast mediterranean vegetabels if you're interested. Us veggies get a bit sick of being palmed off with a lump of cheese and a boiled egg.
OP -do you not think you're getting a bit carried away? its a light lunch for a few walkers not a State luncheon. I'm sure some hot beef or pork baps with the trimmings and a nice cake for afters would suffice - sounds to me a bit like you're showing off and giving yourself more work than needed -the more you do the more can go wrong! ;-)
