Hi. We have a glut of kale in the garden, I absolutely love the stuff but its getting to a point now where we are eating it 'cos its there'. I was wondering if I could freeze it? I thought about shredding it, steaming it for a couple of minutes then packing it into plastic bags. I did this with green beans last year and it worked fab but kale? not sure -has anyone tried this?
Wish I had this problem....love the stuff. According to my "freezer bible"....yes - wash, shred, blanch, pack tightly and steam from frozen. Texture may not be quite the same, though.

It's the St. Michael Freezer Handbook....from the days when M&S did their own books. It's dated 1983 and absolutely indispensable ...there should be something similar available in somewhere like The Works (cheapo bookshops) perhaps.
Hi jane , I do that with broccoli ,cook with stock and puree then freeze as a base soup to add cream and cheese when I defrost it. Kale soup? must go look for a recipe. We are getting to a point now where we'll be having 'Kale Mexicaine' for tea (Young Ones Xmas special lol!)
