One Pot Non Spicy Ideas Please

We have visitors coming to stay for ten days shortly. In these circumstances I like doing one pot meals as I can just chop everything up, bung it in the oven and not have to faff around or disappear into the kitchen.
One of our guests can’t eat lamb or pork. Or tolerate any kind of heat or spice because of a medical condition. Creamy sauces are very much enjoyed but not essential.
I’d really appreciate some ideas, winter casseroles just don’t seem right in July...

Funnily enough I have a pot of butter chicken bubbling away in the oven right now. Although it’s not hot, the spices used can’t be tolerated by my guest. Thanks anayway spath.

I’d forgotten about chicken basque, it’s used to be my go to one pot meal for guests, thanks for the reminder.

Get a roasting tin - chunky chop peppers, onions, courgette and small baby potatoes, stock cube or fresh stock, just a pint, pour over the veg, place chicken thighs on top and sprinkle with a little jerk or med or tagine seasoning and bake.

Just looked up a recipe for lemon chicken and pea risotto, will add that to my list.

Whole chicken in a slow cooker, brown rice, carrots and onions all chopped, add salt n pepper and chicken stock and leave, the stock all gets soaked up in the rice.

Liking both of those Rockrose, I gave my slow cooker away but could do that one in the oven. Thanks.

Noodles. Although not oven cooked you can throw anything in.
Lemon and mushroom chicken

Marinate chopped chicken breast in lemon juice and a little parsley for an hour, then stir fry some button mushrooms in a little butter add the chicken,and the zest of two lemons, add either cream or cremefraiche, stir and put into an oven proof dish 160 degrees for 35-40 mins. Serve with a green salad and crusty bread or green pasta. Not one pot but so easy

Steak Diane. You could bung some veg in the oven. It's really quick.
how about a tagine, beef, chickpeas, onions, apricots, tinned tomatoes and tagine spice (but its not spicy)

Not sure I want to stand there frying steaks to be honest Ummmm but the sauce does tick all the boxes so worth considering.
Hadn’t thought of a tagine, something a bit different.

Wish it was mamy but sadly that’s also a big no no.
All the things I make on a regular basis or as special meals seem to have something in them which can’t be tolerated and I’m getting desperate....
All your ideas are so much appreciated.
