My 4 year old daughter is a fussy eater and I want to broaden her diet - she likes cheese, some vegetables, and at a push will eat chicken. She eats roast chicken dinner, cauliflour cheese, stuffed pancakes (broccoli and chicken in a white sauce) and things like that. At a push I'll give her fish fingers and baked beans but I'd prefer to cook easy meals for her, and if possible have her help. I need more ideas please!!! Thanks in advance.

For more on marking an answer as the "Best Answer", please visit our FAQ.There was a perfect recipe for you in waitrose the other day. Cheesy mash topped chicken bake. Basically it was chicken and veg in a cheesy or white sauce, topped with mash covered in cheese and baked until the cheese bubbled.
You could add interest to the mash by mashing in other veggies - my sister used to do this when her kids were small - she had vampire mash (beetroot and potato); sunshine mash (carrot and potato) and alien mash (green peas or other green veg mixed with potato). Marbled mash was a mix of one or more colours not quite stirred together. It was ages before they cottoned on to the fact that it wasn't just dyed potato!
Why not let her help you make fishcakes? Mix a tin of tuna with some mash and a bit of tomato puree. Shape into balls and then squash them and coat in flour before frying in very little oil in a non stick pan.
You could combine those ingredients above.
Cook off some diced chicken. Then put this in a small casserole dish with some parboiled paste, sweetcorn and peas. Pour over some cambells mushroom or chicken soup diluted with a little water. Top with cheese and bake in the oven until golden brown.. You can also add some crunched up plain crisps with the cheese, but you might want to leave that out for the salt!
Cook and drain some pasta.
Fry some chicken breasts (cubed ) in oil. Add and chopped veggies of your choiceand cook. Stir in one tablespoon of flour and cook for one minute. This will look lumpy and strange!! Add about half a pint cold milk. Keep stirring to thicken, add half a chicken stock cube, stir in pasta. You can add some chopped bacon with the chicken or you can omit the meat and add cheese at the end instead. My kids love this one.
