Jamie Oliver's BBQ marinade
Did anyone happen to write quickly enough to take down the recipe he gave the other night? I know the programme's repeated on Sunday, but I'd like to try it before then & it's not on the C4 website yet.

2 tblsp butter - use unsalted
1 small onion, finely diced
1 tsp ground black pepper
3 tblsp caster sugar
2 tsp mustard powder
Level teaspoon smoked paprika ( or plain if you have no smoked)
A good dash of tomato ketchup
4 fl oz apple cider vinegar
8 fl oz water
3 tblsp worcestershire sauce
Melt the butter gently - do not over heat. Cook the onion til just clear. Add dry ingredients. Bring to boil and use there and then or bottle (sterilised jars...) and store.
Or:-
Soy sauce
Dry sherry
Touch of garlic powder
Dash of lemon juice
Some fresh grated ginger
......and a tablespoon of honey
make a good mix of the above, marinade meat for as long as poss and cook....
