You could make up a cauliflower and vegetable dish in a cheese sauce (just ensure you add in loads of lovely veg like mushrooms, onions, peppers, chillies etc etc and include some serious spices in there too, as well as proper cheddar in the sauce).

Another cauli dish would be a cauliflower curry - simple - onions, chillies, tomatoes, spices etc etc

How about cauliflower and potato soup ? Or cauliflower, broccoli and peppers in couscous with almonds...
