Sweet Thai Chilli with Chicken

Add 2 chopped chicken breasts and colour. Add fresh chilli to taste, depends on how hot you want it, add a good glug of shop bought sweet chilli sauce (I use sainsburys or blue dragon) add a glug of fish sauce (Nam plas !!) blue dragon. Don't be put off by the smell !! I like it quite saucy and either add more of the wet ingriedents of a splash of water. Let it all bubble togther niceley until thickened and glossy. While that's going on cook some rice noodles according to pack, I like Sharwoods, important not to over cook these. I either serve these plain if so I would drain and mix them in with the chicken, or add some oil to a frying pan break in a couple of eggs and scramble for a while(don't be to precious) then add the drained noodles and stiry fry for a while. I sometimes add a splash of fish sauce to these, dollop on a plate and cover with chicken ...delish!! not authentic but very easy quick and tasty
I have cooked this before using a jar or two of mango chutney (qty dependant) along with around 5 red chillies c/w seeds, and mixing round in a pan until amalgamated.
Add your chicken pieces, and leave to marinade once cool in a sandwich bag for around a day. Then cook (bake). It makes a lovely thick, sweet but very hot sauce....

Similar to Kazzarooney, but I use green chillies and coconut milk. Fish Sauce can be replaced by salting to taste and to sweeten to tast use pine sugar (or soft brown if pine is too hard to handle) Instead of noodles I do sticky rice or jasmine rice.
If you have an Oriental Emporium near you it's worth a visit, not only for fresh ingredients not available in places like Tesco, but for products made by Mae Ploy or 'Thai Taste' and a lot with labels in Thai Script where you trust the owner to put them in the right place!!
