This may seem like a daft question, but is there a recipe for breadcrumbs? Should the bread be left out to go stale?

Not a daft question alb,yes leave the bread out for a few hours to get harder so easier to either use grater or put in food processor,dont leave too long though will end up rock solid and you could possibly break the baldes in the processor,by the way what are you making?

Chicken Kiev, quite like the fresh ones the supermarkets do so I thought I'd try a home made one.
Sounds great!, usually have loads of odd bread ends so i do a massive amount of breadcrumbs which i freeeze in separate bags and use them straight from the freezer,another saving tip!!!!
Just leave slices of fresh (not old and stale !) bread on a tray or plate to dry out for a few hours or place in a cool oven until dry - 150 deg C, 300 deg F, Gas Mark 3, (about 15 mins, turn over halfway through) and then process the slices in a food processor or pop them into a sturdy plastic bag and beat them up with a rolling pin. Don't use stale bread - your breadcrumbs will taste stale ! As puddicat has said, you can then freeze them in suitable sized bags or even use a freezer proof plastic container. They defrost quite quickly if you don't pack them into the bag/container too tightly.

Unfortunately I never got round to it, ended up having an Indian takeaway, it seemed a lot less fuss....... lol
