Hello! just spotted your question.
We use a Riddles Ginger Compound which we obtain from our Health Food Shop. It comes in two strengths- our prefered one is the Extra Hot.
Years ago I used to make from a recipe which had been in the family since the 1800s. I was then told that some of the ingredients could no longer be obtained!

I have tried several healthfood shops, but not one stocks or will order the ginger compound, any help will be appreciated
