I just treat them like ordinary red peppers, chop them up and use them in salads, or make soup with them!
You can slice them lengthways, deseed them and fill with mushroom risotto topped with grated cheese, then roast them. Lovely.
My friend halves red pepers lengthwise, leaves the stem on but de seeds them then bakes them with a little cheese, (garlic boursin, mozzarella, thin sliced emmenthal) and one or two anchovy fillets. Somtimes she drizzles with olive oil, sometimes not. This makes a to die for starter to a winter dinner or a yummy light lunch served with crusty bread
I love to use this type of pepper in soups. Roasted red pepper and cherry tom soup with basil is delicious. Or you could make a red pepper tapenade to go with crusty bread. Google for recipes.
