My penfriend lives abroad in Madagascar and her toddler is invited to a sunday school lunch for the kids. all the mums bring 1 dish. She asked me for ideas for a recipe with the following foods. She has potatoes, carrots, flour, cheese, Tomatoes. They are quite poor, but she says she could also buy cucumber, pasta, Zucchini,(not sure what that is!!) Beef or chicken or fish, and milk if necessary. Can anyone come up with anything that kids will like from this lot. Thanks in advance.

She could make a cheesy-vegetable bake with what she has. Parboil both the potatoes and carrots until just tender,then slice into discs the thickness on a £ coin. Layer in a buttered shallow baking dish.and season with salt and pepper. The she can either just scatter grated cheese and sliced tomatoes over the top and bake in the oven until the cheese is golden and bubbling......OR she can make a basic cheese sauce ,and pour this over the veg and bake. She could also make a pasta salad with the tomatoes,cucumber,and zucchini (courgettes). As long as she keeps it simple-the kids will be happy.
