Pepper Sauce

Does anyone have a good recipe for a home-made pepper sauce?

I just do a normal gravy mix with extra black pepper

Fry a little bit of onion or shallot, add your peppercorns and some brandy or white wine and bubble away for a bit then add some double cream ...georgous
