Alternative to cream in recipes

I want to make a roasted cauliflower soup (as seen on Come Dine With Me!) and as I'm dieting need to know what would be a good alternative to using cream in the recipe.

How about a teaspoon of butter, two teaspoons cornflour and 100ml skimmed milk?
I always use a Very Low Fat Natural Fromage Frais, works just as well
elmlea low fat version has 50% fat content of cream and is a very good alternative, tastes and behaves the same as fresh cream.
also low fat versions of creme fraish, natural yoghurt and fromage frais work well.
