Impossible Pie
Does anyone have a recipe for this custard type dessert that they have had good results with?
I remember trying it a few years ago & wasn't that impressed with the result.
I've googled it, but there are many using different quantites of ingredients and wanted one that you were pleased with.

This is the one I use:-
4oz Butter
8oz Caster Sugar
8oz Desiccated Cocunut
4 Eggs
4oz Plain Flour
Half Teaspoon Ground Nutmeg
Half Teaspoon Vanilla Essence
Half Pint of Milk
1. Preheat Oven to 350F (180C) Gas Mark 4
2. Lighly grease 10inch pie plate or flan dish
3. Cream butter and sugar, add coconut and eggs.
4. Sieve flour with nutmeg, add vanilla essence.
5. Fold into coconut mixture, gradually whisk in milk.
6. Pour into prepared dish and bake for one hour.
