there seems to be a plethora of recipes to make f+cs on the net, but does anyone have a chipshop batter recipe?

most on the net involve beer and i've not seen any beer in the few chip shops i've had the pleasure of seeing behind the scenes.

i have however seen bleach for chip whitening and a green gunk for making the peas greener, but that is another story

I have been making batter for years, my mother passed the recipe down to me, she always reasoned - fish and chip shops (40+ years ago) would not waste money on eggs or beer for their batter. I use flour (plain or self raising) a pinch of salt, pepper and (a secret ingredient given to me by a retired chip shop owner) half a teaspoon of Bicarbonate of Soda. Mix these ingredients with enough water to make a smooth batter. If possible leave to stand for a while. Coat the fish with flour and then dip in the batter. Deep fry for a lovely golden crispy batter (the crispy bits left in the pan are great). I also use this batter to make fritters. Slice some potato (not too thick) coat in the batter and deep fry. Heaven. Good luck, hope this works for you.
Gordon Ramsey adds a teaspoon of curry powder. Gives it some flavour and a nice colour. Tried it before and it worked quite well.

thank you that is just what i am looking for.
I add vinegar to my batter for fish and also in my yorkshire pudding batter,Got some yorkshire puds in the oven at the moment.
My hubby works in a large fish restaurant and they use a batter mix, I think a lot of them do for convenience and it is delicious
thanx scarlets fan. i live in n.spain, so i do miss fish and chips, but not very keen on them being too greasy. so i tried your recipe tonight. bloody ´ell it was like proper fish in batter but better, it will need fine tuning, but quite tasty for a 1st effort
