does anyone know a good recipe for a orange sauce, to go with duck and brown rice (or chips in dads case)?
The recipes i've seen include creme fraiche which dad won't eat, so need one without, he thinks the clearish ones with no cream etc are the nicest, but doesn't know how to make them.
Here's the quickest and nicest one I know - thicken some orange juice with a little cornflour and water. Add Oxford or any orange marmalade, and for a bit of 'oomph' you can add either a pinch or two of powdered ginger, or some orange liqueur. You can always add a little sugar if not sweet enough
i'm using orange juice and zest with a bit of port and cornflour mixed with chicken stock (i've been told to do it like this by dad, but making sure the stock is cold when i mix it in.)
the stock can be boiling hot as long as the cornflour is mixed with a cold liquid i.e. orange juice or water and then it can be poured slowly into the hot liquid but make sure you're stirring all the time with a whisk & you'll be fine (you wont be wasting time waiting for the stock to go cold & then re-heating the whole thing afterwards)
I used water from the potaotes to make the stock, and by the time i was making the sauce it was cool, so i added the cornflour to it. And i've missed dr who.
