Chocolate Chip Cheesecake

For those of you who enjoy a classic vanilla cheesecake and chocolate, this chocolate chip cheesecake combine the two perfectly. You keep the delicate cream cheese and vanilla flavour of a classic New York cheese cake, but you have little delicious, indulgent pockets of chocolate waiting for you to find.

Ingredients

For Base

  • 125g chocolate biscuits, like bourbons
  • 85g butter
  • 5 tbsp caster sugar

For Filling

  • 250g chocolate chips
  • 680g cream cheese
  • 287g sugar, granulated
  • 180ml sour cream
  • 2 eggs
  • 1 egg yolk
  • 1tbsp vanilla extract
  • 2tbsp plain flour

Method

  1. Preheat oven to 180C. Line and grease a 23cm spring form cake pan.
  2. Blend the chocolate biscuits in a food processor, until they become crumbs, mix in the butter and sugar and firmly press the mixture onto the bottom of the cake pan.
  3. Beat the cream cheese, flour and sugar together. Add the eggs one at a time and the egg yolk, beating them into the mix, then beat the sour cream in and vanilla until smooth.
  4. Fold in the chocolate chips and pour the mix into the pan.
  5. Bake the cheesecake for 45 minutes, leave to cool then refrigerate for at least 4 hours, overnight is best.
