Serves 8

Chocolate tarts always go down well and this one is no exception. The only difference is there is no baking involved. So for cake novices this is a perfect starting point. Decorate with a few raspberries or icing sugar and you will fool everyone into thinking you are an expert.

Luxurious soft amaretto flavoured creamy chocolate on a crunchy sweet base is a perfect finish to a dinner party whether it is for Christmas or during a hot summer. The luxurious flavours are in a true Christmas and New Years sprit of indulgence and celebration, while the soft cool creamy chocolate is a perfect dessert to cool down with on a hot summer evening.

Ingredients

  • 180g pack biscuits
  • 90g unsalted butter
  • 2 tbsp golden syrup
  • 250g chocolate minimum 60% cocoa solids
  • 1 tbsp amaretto
  • 200ml whipping cream

Method

  1. Crush the biscuits. Melt the butter with golden syrup in a microwave. Stir in with the biscuits. Press the biscuits into a 12 x 36 cm tin and refrigerate to make a biscuit base.
  2. Whip cream in a bowl, until firm.
  3. Melt the chocolate by putting it in a heat proof bowl within a saucepan of gently simmering water.  Add in the amaretto.
  4. Gradually fold the chocolate into the bowl of whipped cream.
  5. Once completely mixed, pour the chocolate cream into the tin with the biscuits, smoothing out the surface.
  6. Chill over night.
