Eton Mess

This delicious summer dessert, full of juicy strawberries, gets its name from the famous Eton College, where it was invented and served annually during picnics and cricket games.

Eton mess is a very yummy mess that is wonderfully simple to make, it only takes a few minutes, because there is absolutely no cooking involved! It is a perfect desert to get children cooking and they will enjoy the fruits of their labour.

Full of summer fruit and cream, as well crispy, chewy white meringues an Eton Mess is the perfect way to celebrate summer.

Ingredients

  • 500g strawberries, roughly chopped, chilled (save 4)
  • 300ml double cream
  • 6 small white meringues

Method

  1. Whip the cream until soft peaks form, then gently fold in the chopped strawberries
  2. Crush the meringues over the top of them and fold in gently
  3. Spoon the mixture into glass serving bowls
  4. Decorate with a strawberry on top
