One of the main ingredients in spaghetti sauce is tomatoes. These were unknown in Europe until they were brought over from Central America by Cortez, probably around 1520 - 1530. So it couldn't have been before then.
But the Aztecs had been cultivating tomatoes from around 700 AD, and would undoubtedly have enjoyed them in a good chilli. And spaghetti sauce is much the same, but without the chilli peppers. So you
could say it was the Aztecs!
