Have searched extensively & come up with nothing but the rhyme: Solomon Grundy Born on Monday Christened on Tuesday Married on Wednesday Took ill on Thursday Worse on Friday Died on Saturday Buried on Sunday And that's the end of Solomon Grundy! Will keep looking tho & if I find anything out I'll let you know.
Nursery rhymes may have ulterior meanings - ring a ring a roses is about the plague, little Jack Horner about a wannabee in the time of Henry VIII, etc. However, the Opies who write on Nursery rhymes, say this type of interpretation is not useful. Eek running out of space: a disease called progeria - premature aging. ******** syndrome is a variant of this.
The rhyme itself is the typical pessimistic message, rooted in anger at a strong class structure with too many people on the bottom; the days are years, a common kind of riddle.

The name Solomon Grundy is guessed to come from a dish called salmagundi or salmagundy. See a wikipedia article here:

See salmagundi sold here and called "Solomon Grundy" here!
