When did Taiwan give up it's seat on the security council to China?
What deals did it involve, as China had (i believe) always stated that it would not take a seat on the if U.N if it disputed it's suzzerainty over Taipei?

It wasn't a case of 'giving up a seat on the Security Council'. It was more like being thrown out of the UN. See here:
