Do plants start making sugars etc the moment the get in the sun
or do they need to 'crank themselves up' for a while beforehand.

Whilst I do not know that sort of detail I'd have thought immediately. After all what would delay it ? Not like they decided to have a cuppa and a couple of biscuits first before starting work for the day.
The way I see it (in simple terms, is that the plant initially lives on reserves in the seed then the leaves (when open) act like solar panels, taking energy from the sun.
