I build a raised bed and filled it with compost. ... It seemed like a good idea !
Despite the plants liking it, it dries out really quickly. What can I add to make
it retain moisture better

If you add some cardboard boxes laid flat, which your local convince store will give you, they will retain moisture and serpress weeds.
Also don't bother with any digging, this "no dig" method is proven method of improving soil fertility and encourages good bacteria and worms.
Dig some peat into it, peat will hold moisture.
Those gel crystals are excellent. The bigger the pack the cheaper they get so shop around
A good layer of moisture retaining mulch will pay dividends
If the plants are liking it, why would one consider more moisture retention was necessary ?

Are these gel pellets good for the ground/environment ? They seem artificial.
Og they seem to biodegrade
I would go for a thick layer of WELL ROTTED stable manure approx 4 inches deep, the mulch will not only cut down on trips with the watering can, but will have the added bonus of providing nutrients.
I agree with OG. If your plants like it, why don't you? What are you asking? How to make your plants not like it? Or how to make you fancy it?
