I purchased 4 fruit trees [ cherry, pear, apple, plum] in tubs in Nov, they have withstood the bad weather very well, I undestand that the first year you should remove blossom/fruits and not let them grow, it will give better crop the following year and years to come, is it the blossom u remove or wait until tiny fruits appear.
This is my very first attempt., advise appreciated.

If you want to take off this year's crop, let it blossom, then pick the fruits off. IMO if you take care of the trees and feed them adequately, theres no need to take all the fruit off but you might want to restrict the tree to 2 or 3.
