In the winter they need very little water. If the leaves look a little 'wrinkled' and 'shrunken' then water it a little. Overwatering, can cause problems. The Compost should be free draining and not hold the water. As long as the room temperature is above freezing and doesn't vary by too much, too quickly you should be ok.
Any 'bits' that fall off (including leaves) can be poked back in the pot with a fair chance they will root and grow.
To keep the plant strong, tall and bushy pitch out the top two leaves every spring and during the growing season. You need to try and stop it getting 'lanky' because the long branches eventually fall over and sometimes snap off.
My 'moneyplant' is now about 3 - 3½ft tall x 3ft round. Currently in my frost free greenhouse because it's too big for my house.
I think there's a money plant in Kew Gardens at about 6ft tall!!
