Netting fruit trees

I have a fruiting cherry and a plum tree beside each other. Each is about two years old and both fruited well last year. Unfortunately both were "robbed" by birds. I would like to construct a netted compound for them this year. Is it in order to take off the leader in each tree to control their overall height and, if so, when is the best time? Thanks.
