I've got a wooden fire surround which is oak effect. I think it's mdf with a oak veneer. I want to paint it cream. What sort of paint should I use?

You need to get an undercoat that will make paint stick to anything Band q sell a rustoleum spray one. Clean and degrease the veneer really well, then use the undercoat/primer. You can the use whatever paint you like.

We've got a gas fire in with a marble back and hearth. The fire isn't used much though.

PS you can finish with a coat of non yellowing varnish (water based) for extra durability
