How do you get hollyhocks to flower all the way up the stem, mine seem to only flower one bud at a time,ends up being a long stalk with only 1 or 2 flowers on at a time?

Not sure that the plant can be forced to do that, but experiment with feeding one more than the others, watering another one more than the others and see what results you get next year.
It seems many gardeners have noticed sporadic and short-lived flowering this year, others report they've had the best blooms ever.

A sunny but sheltered position would be an ideal position for them.
