Was given a butternut squash but have never cooked one in my life. What can I make with it? I do like most veggies but am at a loss how to cook this.

half it length ways, scoop out the seeds and discard them, and roast with a little oil and salt and pepper and when soft scoop out the flesh mash with salt and enjoy.
Or as above and add to stock with seasonings of your choice and then blend for a silky creamy soup.

To start, you'll need a very sharp knife and strong hands/wrists. I can't handle the damn things anymore.
Butternut goes well with strong warm spices like cumin and coriander, pepper and chilli...so chunky slices coated in spices and olive oil, then roasted is good.
Also great in a risotto with sage. Or mashed. Nice with sausages or any pork based dishes.
I just roast mine with olive oil and some salt and pepper.
To make it easy to peel, I cook mine at high pressure in my Instant Pot for a few mins and the skin just slides off. Apparently, you can do the same with a microwave. If you google the "singing swede" it is the same thing. I find peeling them a real chore.
