I've done quite a bit of plastering and it's always been okay, whichever I've used. I think the only difference is in the setting time; some set a bit quicker than others, but unless that's a critical consideration, just use what you want.
Make sure you keep your tools clean, use clean water for the mix, and don't overmix, that will make it set quicker than you'd like.
