I am looking at buying some A4 laminating pouches, but have come across something that i know nothing about. I need to know what thickness of pouches i want to use, or how many microns as the technical term goes. anyone have any ideas.

I use laminating pouches quite a bit, I tend to just buy the cheapest I can find and have had no problems with any I have bought. Last pack came from Poundland( I think) it says 80-100micron on packet. The more expensive Dahle packaging gives more of a guideline according to the temperature ranges
150 micron - 98-103 degrees C
250 " - 108-113 " "
350 " - 113-118 " "
500 " - 115-120 " "

so I think it might depend on your laminator. Don't know if this is much help or anyone else can elaborate on the info I have given.
