Our exterior woodwork is tired but not rotten. If we go for new uPVC exterior fittings is it OK to fix this to existing woodwork?

Yes, provided that is itself not showing any signs of rot.
Otherwise the new uPVC is going to drop off the rafter ends within 5 years.
