How do you set up a direct debit, so that you can automatically take an amount of money from somebody elses account (with their permission) every month for example?

You can't, they can
If the amount of money is the same each month, ask them to set up a standing order at their branch. Just give them your account number and sort code. You would have to have a business account (with all the expences of same) to be able to set up direct debits and provide monthy bills for the person prior to requesting payment.
Or if the use internet banking they can probaby set it up themselves........ Or they can set up a regular transfer, sending the same amount on a certain day every month.........
You simply ask the person who is to be debited to set it up by giving them your details - account name and number; branch and sort code. They then contact their bank and set it up. It will cost you nothing but it might cost the other person a small fee - up to 20p - depending on their bank.
