you dont have to believe anyone.

go with whatever you want to do, but you wont get anywhere by saying that you though you had 7 days grace or that it was only an hour

im asking a site like this because it is more useful getting answers from people who have experienced these things, if no one wants to help then dont reply.
No Insurance is an "absolute" offence. You either have it or you do not. It is your responsibility (absolutely) to ensure you have it and you did not do so.

Ask your solicitor (who seems to know about these things) to take the case on for you and plead not guilty in the magistrates' court. You will almost certainly be found guilty at trial. You will be fined one and a half week's net income, and about 450 costs and receive six penalty points. And, of course you will need to pay your solicitor his fees.

You could reduce the fine and costs considerably by pleading guilty, and offer your mitigation, but you will still get six points.
Had the broker/insurance company received and accepted your payment and confirmed that you were 'on cover'?
If your insurance company had agreed to put you on cover then ask them to send a letter confirming you were on cover. If they didn't agree then you (and also your polish speaking dad if he was driving) were driving uninsured
