My CV is long and varied. I want to apply for a job that I haven't got much experience of, but training is included which is fine. Should I just try and stick to the last 3 jobs in which time I have been self employed in different fields for at least 11 years? or do future employers wish to see everything, which would then take up 3 pages! I'm also asked for a covering letter, so would I put relevant of experience in that, or in the CV? Thanks for any help.

Cover all jobs but one line only for earlier ones, getting progressively more detailed, would be my advice.
Put relevant experience in CV but draw attention to (and/or summarise) it in the letter.
