hi, i am having some friends round for dinner next week. Both strict veggies (no fish/meat) or stuff cooked with fish/meat Needs to be simple because i am still hobbly from the hip replacement so can't do much carrying/fetching ATM.
need two courses (starter + main)
suggestions please

I would start with either a simple tomato,mozzarella and basil salad,or toasted bruschetta topped with finely chopped tomato mixed with olive oil,garlic and a hint of balsamic vinegar, I would have a risotto as the mains-either with roasted butternut squash and grilled red onions,or peas and baby broad beans.Or-baked stuffed pasta shells with a fresh...

Are they vegans?
roast pepper soup. pasta , tofu ?
Cant be vegans if they eat fish
Risotto with cheese and sweet potatoes (if they eat cheese) - I had that yesterday

For the starter you could do bubble and squeak with a poached egg and hollandaise sauce (I had this once and it was lovely - but I ditched the egg and had smokey bacon instead!).

HI Anne - not for these guests (obviously) - but just as a suggestion for others.
Stuffed peppers with couscous and roasted mediterraean veg like vine tomatoes, onion, mushrooms, aubergine, courgettes.

Bang all the veggies in a dish drizzed with olive oil in the oven and then stuff the peppers with the rest of the veg and some flavoured couscous which is really quick and easy to make in a pan, I like just simple with butter and some garlic.

Goes nice with a tomato and garlic sauce with a bit of red wine in it if people are drinking.

Makes a nice starter. You could also do it with half an aubergine each instead of peppers.

Can't remember the recipe but you could do wild mushrooms (think you just fry them in butter and olive oil and a bit of garlic and then season and add lemon juice) served on toasted muffin (which has a thin layer of cream cheese on it) with a side salad.
so they will eat cheese, do a cheesey, mushroomy, tomatoey, thingy :-)
