I’ve got a caravan at the coast which I rent never had any issues with break ins or damage from guests but other owners have been adding cctv inside and out .
I can see the advantages but worried about laws .
Any advice would be great on what I can and can not do .

If you've never had problem with break in or damage, then leave it be and run a happy holiday let free from spy in the sky.

Should you change your mind you will most certainly need to get your head around the GDPR which covers the storage and use of recorded images.
