My son received an ASBO from the police on Friday night due to the exhaust on his car being too loud and people had videoed it and complained. 

Can he request the evidence which the police have used to decide to issue an ASBO

So your son is not allowed to drive when this complainant deems it not reasonable for him to do so – I would be making a complaint to the police about this person/complainant.

 

If that does not work, video the person driving and overdub the audio with a loud exhaust and have plod issue them with an ASBO.

There seems to be a trend lately for poorly modified cars with loud exhausts, lowered bodywork, canted wheels etc. Some of these people need to grow up. If they want to tart up their car tidy up a classic and do concours competitions. For reference none of these mods make a car handle better or improve fuel consumption. They might give him the relevant bits of the video but not so, in any way, it identifies the complainant to avoid them being coerced.

You should understand that ASBOs are not criminal convictions. They are simply court orders formally prohibiting the recipients from participating in activities which they should not be engaging in anyway.

In the circumstances outlined in the OP, cars should not be driven with loud exhausts. Don't do it and you won't fall foul of the ASBO.
