Imprisonment for driving without licence and insurance and a massive fine.
I lived in Gran Canaria for 6 months and although I drove legally, numerous people drove on provisional licences, borrowed other peoples etc. One locally bar owner drank a bottle of scotch was driving home when the local police stopped him, they asked him to get out of the car, he said he couldn't because he was too drunk, so they drove him home!

I got pulled a couple of times by the police routinely and although they look at your licence I don't think they knew what they were looking for and I doubt that they would have access to the DVLA, but you never know.
We now have a reciprocal agreement with Spain and many other countries and yes information can be obtained from the DVLA.

It became law on 8th January 2007, under the provisions of Section 49 of The Road Safety Act 2006, that information in regard of UK driver licensing and vehicle registration may be disclosed to foreign authorities...

You would be driving without a valid licence and subject to whatever penalty spanish law specifies for such an offence.

The likelhood of detection is another matter.
