Last week on River Cottage, the section on using left-over food, the chef made a lemon drizzle cake suitable for coeliacs, using left-over mashed potato instead of flour.
I just wondered if anyone had tried it and what do you think.

It was probably full of dirty greasy hairand the sh@t from under his fingernails (and maybe his toenails and under his ............well other stuff as well !!!)I wouldn't trust him to feed my goldfish. Im sure if you google recipes for coeliacs you will find some good stuff. I mean why use left over mash potato ? Why not just boil them and use them fresh ? Is he Susan Boyles brother?
There is a recipe on good food web site.
Think the last answer was not very helpful.
