Post Office = Red
Gas = Blue
AA = Yellow
RAC = Orange
Eddie Stobart = Green/Red

... etc etc
its used as a base colour the customer can then paint or fit graphics as require.
As chas said, it's because it's generally easier to sign write. You also get better resale value on white vans.
Using Naz's example, Eddie Stobart trucks are actually delivered in white (with red bumpers and chassis) and are then 'wrapped' in a giant vinyl sticker which gives the green livery.

Because 'taupe van man' just sounds wrong ;-p

Think your wrong 'snags', taupe van man has a nice ring to it, i might put that on the side of my van. only problem is its a white transit! foiled again.
Beige van man would just blend into the landscape....
Black Van Man would be considered rascist.
// Post Office = Red //

Royal Mail = Red
Be different, paint a rainbow on it and call yourself Multicoloured Van Man.
White painted vehicles are cheaper from the makers. Metallic finishes - mostly all colours except white & red - cost more. Example Fords are £495 more metallic and £725 for pearlescent colours
