I have been trying to get The Eagles - Hotel California off of itunes. Is it really not available or have I missed something??

I had the same problem, couldn't believe it wasn't available to download from itunes! Ended up having to buy their Best Of CD and transfer it! :-(

It appears the track (and other Eagles material) is available
from the iTunes store all over the world (US, Japan etc) but not in Europe.

This must be a licensing issue.
